Like the Aligote, this wine is a one off from an unnamed organic vineyard in Ribbon Ridge AVA. I have always wanted to make Chenin blanc, it is one of my all time favorite wines. I told my designer that it was a unicorn in the Willamette Valley so she put unicorns on the label. The fruit was picked, pressed, then racked to a 700 L puncheon and 6 neutral French oak barrels. It went through primary and malolactic fermentation in the barrels, then was racked and assembled, filtered and bottled on June 5th.
